Step 1: Cook quinoa according to package instructions
Step 2: Dice squash and zucchini into small pieces
Step 3: Oil and season salmon
Step 4: Heat oil or butter in a pan over medium heat
Step 5: Cook salmon skin-side down for 2-3 minutes per side. Reduce heat to low, flip salmon, cover, and cook 5 more minutes.
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute squash and zucchini for 7-10 minutes, until squash and zucchini develop a nice golden-brown exterior
Step 8: Add the quinoa to the pan with squash and zucchini and stir well
Step 9: Plate the salmon with the squash and zucchini quinoa and serve!
