Prep Time: 30 mins Total Time: 45 mins
Step 1: Boil water in a large pot
Step 2: Cook quinoa according to package instructions
Step 3: Dice the broccoli and carrots into small pieces (see instructional videos below)
Step 4: Oil and season chicken
Step 5: Add oil or butter to a pan and heat over medium heat
Step 6: Sautee the chicken 5 minutes, then flip chicken and reduce heat to low. Cook covered for another 10 minutes, until chicken is no longer pink.
Step 7: Add oil or butter to either the same pan the chicken cooked in or a new pan and heat over medium heat
Step 8: Sautee the broccoli and carrot 5-10 minutes, until broccoli begins to brown and carrots start to soften up.
Step 9: Combine the chicken and quinoa with the broccoli and carrots, mix well, and oil and season to taste.
