Pan-Seared Chicken & Mushrooms with Quinoa

A wholesome, heart meal ready in minutes? Oh you betcha. Use the quinoa to soak up all of the delicious juices from the chicken and mushrooms that will end up on your plate.

Active Time: 15 mins Total Time: 30 mins

Ingredients:

  • chicken
  • quinoa
  • mushrooms
  • oil or butter

Seasoning:

  • garlic powder or minced garlic
  • lemon juice and/or lemon zest

Equipment Needed:

  • Pan
  • Pot
  • Stovetop

Step 1: Cook quinoa according to package instructions
Step 2: Oil and season chicken
Step 3: Heat oil or butter in a pan over medium-high heat
Step 4: Cook chicken for 5 minutes, reduce heat to low, flip chicken, cover the pan, and cook for 10 more minutes
Step 5: Slice mushrooms into thin strips
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute mushrooms for 7-10 minutes, until mushrooms become tender and turn dark brown. Stir mushrooms occasionally, every 2-3 minutes or so.
Step 8: Plate chicken, quinoa, and mushrooms together and serve!
