Pan-Cooked Cod, Sauteed Zucchini & Baked Potato

With just 10 minutes of work, you'll be chowing down on this heathy feast. Pop the potato in the oven, go do you for an hour, then fry up the zucchini and cod (or any whitefish) and you're all set!

Active Time: 15 mins Total Time: 60 mins

Ingredients:

  • cod (or any white fish)
  • potato
  • zucchini
  • oil or butter

Seasoning:

  • 1 part salt
  • 1 part black pepper

Equipment Needed:

  • Pan
  • Oven
  • Stovetop

Step 1: Preheat oven to 400 F, poke a few holes in the potato, and bake for an hour until inside is soft
Step 2: Oil and season cod (or any white fish)
Step 3: Heat oil or butter in a pan over medium-high heat
Step 4: Cook cod for 2-4 minutes per side, until easily pierced with a fork. If you have enough oil or butter in your pan, use a spoon to baste the fish after you flip it
Step 5: Dice zucchini into small pieces
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute zucchini for 7-10 minutes, until zucchini begin to brown on the outside and develop a slight crunch. Stir occasionally, every 2-3 minutes or so.
Step 8: Plate cod (or any white fish), baked potato, and zucchini together and serve!
