Easy & Healthy Pan-Cooked Salmon & Zucchini with a Baked Potato

Do your body a favor with this wholesome and tasty recipe that is a breeze to make. Throw the potato in the oven, hang out for a bit, and then cook the salmon and zucchini.

Ingredients:

  • salmon
  • potato
  • zucchini
  • oil or butter

Seasoning:

  • 1 part salt
  • 1 part black pepper

Equipment Needed:

  • Pan
  • Oven
  • Stovetop

Step 1: Preheat oven to 400 F, poke a few holes in the potato, and bake for an hour until inside is soft
Step 2: Oil and season salmon
Step 3: Heat oil or butter in a pan over medium heat
Step 4: Cook salmon skin-side down for 2-3 minutes per side. Reduce heat to low, flip salmon, cover, and cook 5 more minutes.
Step 5: Dice zucchini into small pieces
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute zucchini for 7-10 minutes, until zucchini begin to brown on the outside and develop a slight crunch. Stir occasionally, every 2-3 minutes or so.
Step 8: Plate salmon, baked potato, and zucchini together and serve!
