Caribbean-Jerk Whitefish & Zucchini with Rice

Take any type of whitefish like cod, tilapia, halibut and coat it in our Caribbean jerk seasoning mix and pair it with quinoa and zucchini. Boom, dinner is ready - and delicious.

Ingredients:

  • cod (or any white fish)
  • rice
  • zucchini
  • oil or butter

Seasoning:

  • -4 parts onion powder
  • -4 parts garlic powder
  • -2 parts thyme
  • -2 parts cayenne pepper
  • -1 part cinnamon
  • -1 part sugar
  • -1 part salt

Equipment Needed:

  • Pan
  • Pot
  • Stovetop

Step 1: Cook rice according to package instructions
Step 2: Oil and season cod (or any white fish)
Step 3: Heat oil or butter in a pan over medium-high heat
Step 4: Cook cod for 2-4 minutes per side, until easily pierced with a fork. If you have enough oil or butter in your pan, use a spoon to baste the fish after you flip it
Step 5: Dice zucchini into small pieces
Step 6: Heat oil or butter in a pan over medium heat
Step 7: Saute zucchini for 7-10 minutes, until zucchini begin to brown on the outside and develop a slight crunch. Stir occasionally, every 2-3 minutes or so.
Step 8: Plate cod (or any white fish), rice, and zucchini together and serve!
