Step 1: Dice the bell pepper, onion, and ham into small pieces (see instructional videos below)
Step 2: Crack eggs into a bowl and whisk until yolks and whites are combined. Set aside for later
Step 3: Add oil or butter to a pan and heat over medium heat
Step 4: Sautee the bell pepper and onion 5-7 minutes, until onions start to soften up
Step 5: Add the deli meat to the pan with the bell peppers and onions and cook for another 1-2 minutes, until ham begins to brown
Step 6: Add the eggs to the pan with the veggies and meat and cook for 1-2 more minutes, until eggs reach desired consistency. Add more oil or butter, if necessary.
Step 7: Season to taste
